If Z were to make a canon (re)debut alongside Shiki as part of the SSG or something -- now that the Shichibukai have been officially dissolved --, I'd like to think he'd come back and take up the moniker of Black Horse...Zephyr the Black-armed Knight!

Nice theory! The only thing I find odd is Gion being fleet admiral EoS, simply due to the lack of character development 1000 chapters into the series. That being said, I could really see a lot of this becoming true. Great job. Also, I love the threadmark feature

Thought about another possibility. Every cycle FA moves one spot away.

Goat directly before Pre TS - Trio
1 Spot between Dog and Post TS - Trio
-> 2 Spots between EoS FA and EoS Trio -> Issho EoS FA.

Smoker should be White Snake since he even has a move called White Snake and his appearance when using his DF is an homage to the Moniker.

Shiryu of the Rain is Clear Dragon due to his DF mking him invisible.

The color has a lot to do with either their names or DF powers imo.

Sengoku has the goat, his moniker could be Golden Goat due to his Golden Buddha Zoan DF.
