I'm going for the Beast Companion route, but since I'm seeing a lot of players going for npcs. How do they work? Are their stats like those of a player, but weaker?

yes basically... except no... they can only have the main 3x stats.. but will/can be max.. and get special animal things like venom or flight... you get to chose is they get haki or a df or someother big enhancement.. and get several of them... basically you get too play them as they psychically understand you
